Now open, chismis & co. is set to bring a fresh take on Filipino cuisine to Heights Public Market
A new Filipino concept has arrived in Tampa. Similar to how the master minds behind Ichicoro brought ramen to the forefront, the goal is the same for this cuisine. chismis & co. is now officially open seven days a week and will be in the ever-evolving rotating stall within #HPM.
Chismis, means to gossip, to talk about and that’s exactly what Chef Ron Vicencio, wants customers of Heights Public Market to do. Chef Ron selected a handful of the greatest house party hit Filipino dishes (small space, small menu) and has created basic recipes tying the tradition to the food and updating some of the techniques.
“People who love to eat typically love to try new food and since I love to cook I encourage friends to try new foods all the time. Over time, chismis & co. evolved from cooking traditional Filipino food in my home for friends,” said Chef Ron Vicencio. “The menu is approachable for people who’ve never tried Filipino food and identifiable for those who have.”
The opening menu will feature the national dish Chicken Adobo (chicken braised in garlic, vinegar, oil and soy sauce), Chicken Wings (calamansi caramel), Lumpia (fried pork spring rolls), a unique version of the dessert Turon (banana, jack fruit, guava), Calamansi-ade (Filipino citrus refresher), along with a few other traditional sides and of course a few surprises for when you get to the stall.
Every four months, a fresh vendor is planned for the markets “Rotating Stall,” this bare-bones design enables restaurants to easily rotate in to keep bringing fresh food options to customers. It also allows local chefs to test new concepts before deciding to take the risk and find a permanent location.
